Thousand-years Old Eggs, 松花蛋

They are simply preserved eggs. You can use chicken or duck eggs. You have to bury them in a mixture of clay, ash, salt, lime and dried herbs plant rice, soaked in tea for a period of time, which can range from several weeks to several months.
The yolk becomes a dark green, and clear takes on a gelatinous texture and brown.
Today it is still used to prepare this traditional form, but there are modern methods that add some chemicals to speed up the process

In China they are a fairly common food, and easy to find on the market. The most common way to eat it is accompanied by rice porridge. You must cook rice with plenty of water for quite some time, so the mixture becomes something like a cream or porridge. Sometimes, bits of pork are also added for flavor.

Another way of eating thousand years eggs is a kind of salad. Chop and mix with tofu, soy sauce, sesame oil, coriander and chile. You could also cut it finely and addsoy sauce and sugar.
